3 cups mashed potatoes
1/2 cup finely diced or ground ham
1 large egg, slightly beaten
1 Tablespoon parsley
2 Tablespoons finely chopped onions or green onions
1 1/2 teaspoons salt, or less if potatoes are seasoned
1/8 to 1/4 teaspoon pepper
1 large egg, lightly beaten
1 cup soft bread crumbs
hot oil for deep frying
Combine mashed potatoes, ham, egg, parsley, onions, and salt and pepper.
Shape into 10 to 12 small round croquettes.
Dip croquettes in egg then roll gently in bread crumbs to coat.
Fry in 350°F oil until golden brown.
