Chris' Cafe chef-owner Chris Early serves this special throughout the month of March in honor of St. Patrick's Day.
"My Grandmother used ground lamb until us kids found out and refused to eat it," Early writes in an e-mail.
3 pounds ground turkey, or ground beef, or for the real thing - ground lamb
1 teaspoon salt
1 teaspoon pepper
1 teaspoon paprika
1 teaspoon celery salt
16 ounces frozen French-style green beans, thawed
2 cups cheddar-jack cheese
4 cups boiled potatoes
4 teaspoons butter
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
1/2 cup milk
spray butter, as needed
Brown ground meat with seasonings.
Drain and set aside.
Whip potatoes with butter and seasonings until all ingredients are moist and smooth.
Grease bottom of a 13-inch-by-9-inch pan.
Place ground meat on bottom of pan, then green beans, then cheese, then whipped potatoes, trying to make soft peaks of the potatoes.
Spray potatoes with spray butter.
Bake at 350ºF 45 to 50 minutes until potatoes are starting to brown and sides are bubbly.
Serve with salad and carrot muffin.
Serves 6 to 8.
