LF: Citrus-Glazed Chicken Breasts
This healthy chicken recipe is delicious served with wild rice and mushrooms.
Olive oil cooking spray
4 boneless, skinless chicken beasts
1 teaspoon cornstarch
1//2 cup orange juice
Dash of lemon zest
1/4 cup orange marmalade
2 Tablespoons soy sauce
1/2 teaspoon ground mustard
Spray cooking spray in nonstick skillet and heat over medium-high heat.
Cook chicken for 15 minutes, turning once.
As chicken cooks, mix remaining ingredients in small bowl.
Remove chicken from skillet, pour mixture into skillet and heat to boiling.
Reduce heat and simmer until glaze is thickened, stirring constantly.
Add chicken to reheat.
Turn breasts to glaze each side.
Serve with wild rice.
