Pineapple Cole Slaw
This is a basic cole slaw recipe that is easily adapted to use of low fat, low sugar.
3/4 cup mayonnaise
2 Tablespoons cider vinegar
2 Tablespoons sugar
1 teaspoons celery seed
1 to 2 Tablespoons milk
4 cups shredded cabbage or 1 package prepared slaw mix
3/4 cup pineapple tidbits, drained
mini marshmallows - optional
In a bowl, combine the mayonnaise, vinegar, sugar and milk.
Place cabbage and pineapple in a large salad bowl; add dressing and toss.
Sprinkle with paprika before serving if desired.

The little ones love the addition of the marshmallows and it is a good way to get them to eat vegies.
