Surprise Mashed (Faux) "Potatoes"
Cauliflower may well be an underappreciated vegetable, as you will see when you taste these luscious mashed "potatoes." Select a medium-sized head of cauliflower for this recipe.
4 cups cauliflower florets
1 Tablespoon canola oil
2 Tablespoons fat-free half-and-half
Pinch freshly ground black pepper
Steam or microwave cauliflower until soft.
Puree in a food processor, adding oil and half-and-half to taste.
Season with salt and pepper, and serve.
