This hearty noodle salad is a perfect combination of ginger spiced homemade peanut sauce, crisp broccoli, protein rich edamame, and crunchy peanuts. Delicious at room temperature this is a great salad to pack as a lunch or serve at a party.
3/4 cup creamy peanut butter
1/4 cup rice vinegar
2 cloves garlic, crushed and minced
1 Tablespoon fresh ginger, peeled and minced, or (2 teaspoons ginger powder)
2 Tablespoons toasted sesame oil
1 Tablespoon tamari
1 teaspoon maple syrup or honey
1/3 cup hot water
1/2 cup spring onion, thinly sliced on the bias
1/2 cup peanuts, toasted
1/2 cup sesame seeds, toasted
In a medium bowl combine the peanut butter, rice vinegar, garlic, ginger, sesame oil, and soy sauce and maple syurp.
Thin with hot water.
ASSEMBLY AND SERVING:
Add half the dressing to the noodle and vegetable mixture and gently toss.
Add sliced spring onions and peanuts and continue to toss add dressing till the salad is coated to taste.
Serve on a platter drizzled with extra dressing and toasted sesame seeds
