Mom's Chicken Salad Sandwiches
I found this recipe on the web at Jessicasdinnerparty.com. I'd never seen this combo as a chicken salad but it looked so good I had to try it. I made Sunny's sandwich on the Canon Beach - Milk and Honey Bread. It perfectly highlighted the chicken, onion and apple. Sunny had to leave early so I didn't get the photos but I'll do it again tomorrow for lunch for the kids and take pictures then.
2 medium chicken breasts
1 medium onion, cut in half and thinly sliced
1 1/2 Tablespoon light mayonnaise
1/2 Tablespoon dijon or regular mustard
salt and pepper
1 small apple, thinly sliced
4 slices bread of choice
Boil chicken in water* until cooked through.
Set aside until warm enough to touch.
Shred the chicken into desirable sized pieces.
You can make this the night before and store in the refrigerator overnight.
Place the onion slices on a plate** and microwave for 15 to 20 seconds.
Squeeze some of the juice out with a paper towel.
Combine with the shredded chicken.
Add the mayonnaise and mustard.
Taste and season with salt and pepper.
To assemble, place a few apple slices*** on one slice of bread.
Spread half the chicken salad on top and then close the sandwich.

My modifications: * I used chicken broth instead of water...I might use apple juice next time. ** I nuked my onions on the paper towel and it worked perfectly. *** I sprinkled a couple of drops of fresh lemon juice on the apple slices and rubbed them all together to get all sides to prevent oxidation.
