This is DD Jennifer's successful attempt to get Sunny to eat oatmeal for breakfast. It has turned into the kids favorite clafoutis and favorite way to eat oatmeal. Rich and flavorful and good for you too!
1/3 cup flour
1/3 cup brown sugar, firmly packed
1 pinch salt
1 cup regular rolled oats
1 1/3 cups heavy cream
1 Tablespoon vanilla extract
1 Tablespoon maple flavoring
4 large eggs
powdered sugar for dusting (optional)
Preheat oven to 350º F.
Butter and sugar a 9" pie pan.
In a medium bowl combine the dry ingredients, mixing thoroughly.
Add the cream, vanilla and maple flavoring to the dry ingredients and mix until smooth.
Add eggs one at a time, mixing to incorporate after each addition.
Pour mixture in prepared pie pan and bake for 35-40 minutes or until puffed and golden brown.
Allow clafouti to cool and settle for 10 minutes before cutting.
Serve with a light dusting of powdered sugar if desired.
NOTE: Photo is with some fresh blackberries picked in our yard added...just enough to cover the bottom of the plate...Jennifer added about 1/4 cup of oats on top before baking because the berries floated to the top and she was afraid of them burning.
