3 strips bacon
1 pound fresh string beans,
2 cups fresh tomatoes, cut in pieces
2 Tablespoons boiling water
1/4 cup white wine
1 teaspoon salt
1/2 teaspoon sugar
1/4 teaspoon freshly ground pepper
1 teaspoon basil
1 teaspoon oregano
1 teaspoon parsley
1 medium onion, chopped
2 cloves garlic, minced
Fry bacon until crisp and set aside.
Wash beans, remove tips and cut into 1 inch pieces.
Add to bacon fat, along with all other ingredients.
Cover and cook slowly about 30 -40 minutes until beans are crisp and tender.
Serve hot with bacon crumbled on top.
If there are any leftovers with this, which rarely happens, I reheat it with a cut up hard boiled egg on top as a quick lunch. I know it is a strange combination, but I love it!
