Chili-Lime Cashews

Chili-Lime Cashews

Serves 8
Easy to make
Ingredients:
2 1/2 teaspoons coarse salt
1 teaspoon finely grated lime zest
2 Tablespoons dark-brown sugar
1/2 teaspoon red pepper flakes
1 large egg white
3 cups raw unsalted cashews
Instructions:
Preheat oven to 350 F.
In a medium bowl, using the back of a wooden spoon, grind salt with lime zest.
Add dark-brown sugar, red pepper flakes, and egg white and whisk together until frothy.
Add cashews and toss to coat.
Spread cashew mixture in a single layer onto a parchment-lined baking sheet.
Bake until golden, 20 minutes.
Let cool completely.

I made this for dinner group last month and we all liked it. I used a little more then 3 cups of cashews. Use a large baking sheet, check after about 15 minutes. They do get soggy if it is humid when you are serving them. My leftovers were in a tightly covered container and stayed nice and crispy. I used some on a salad, great taste. I might add just a little more pepper flakes the next time if I want more "bite". I would say it serves more then 8, unless you don't have anything else to eat! Enjoy
