I got this recipe from a friend about 10 years ago at a potluck lunch at work. I have made it many times since. Especially good to serve in the summer.
2-3 carrots grated or diced carrots
3 stalks celery, diced
1 medium onion finely chopped
1 can whole kernel corn, drained
1 head cauliflower, cut into small pieces
1/2 cup sugar
1/4 cup vinegar
1/4 cup salad oil
3/4 teaspoon pepper
1 teaspoon salt
Mix dressing ingredients in a small saucepan, bring to a boil.
Let cool slightly before pouring over vegetables.
Let stand awhile to blend flavors before serving.
Keeps for several days in the refrigerator so can be made ahead of time.
