I posted this recipe on TSR when someone wanted a pudding that tasted like Kozy Shack's . I think this is pretty close, and could be considered a clone of Kozy Shack's. Since this is a very old recipe, maybe Kozy Shack cloned this!
1 cup rice
1 cup sugar
1/2 gallon milk
2 large eggs
1 cup milk
1 - 2 teaspoons vanilla to taste.
cinnamon to sprinkle
Put rice, sugar and milk in large pot or Dutch Oven.
Bring to a boil.
Stir and simmer for 1 hour with lid on.
In separate dish, beat in 2 eggs and an additional cup of milk
Take a little of the hot mixture out of pan and mix with egg mixture ((this helps prevent curdling of the egg).
Stir egg mixture into rice mixture.
Add 1 - 2 teaspoons vanilla to taste.
If too thick, add a little more milk.
Pour into a 13" x 9" baking pan or serving bowl.
Top with cinnamon.
This makes a huge amount of pudding.
When I make it for just my family or if I don't want leftovers, I usually cut the recipe in half.
