This is one of the simplest recipes available for the slow cooker and for people on the south beach diet, it comes in very handy. The slow cooker is great because you can make a meal and let it cook, go excercise, go do watever, and then comeback to a healthy cooked meal without any worries. This is why I love the slow cooker, for those days I don't want to be in the kitchen for hours after work
4 boneless, skinless chicken breasts
1/2 teaspoon salt
1/2 teaspoon pepper
3 cloves garlic, crushed
2 slices of lemon
I would recommend first grilling the chicken breast first but that's optional.
Next I would combine all the salt, pepper, garlic, and squeezed lemon juice into a small plastic bag along with the chicken breasts and let it marinate for about 30 minutes.
Pour the contents of the bag into the slow cooker and cook on low for about 8 hours for a meal that fits the south beach diet.
