Servings: 10 (Note, as one reviewer said, this recipe makes a "TON"!, I have added amounts for a greatly reduced recipe using just ONE can of drained beans rather than seven ! Sorry the adjustments are awkward amounts, it's difficult to divide recipe by 1/7th and come up with nice even measurements!
7 (16 ounce) cans kidney beans, rinsed and drained (1 can)
1/2 cup minced onion (1 gently rounded Tablespoon)
1 clove garlic, minced (approximately 1/16 teaspoon)
2 cups mayonnaise (scant 1/3 cup)
2 cups sweet relish (scant 1/3 cup)
1 teaspoon salt (1/8 teaspoon, or to taste)
1 dash white pepper (pinch)
2 teaspoons dry mustard (1/4 teaspoon + 1 dash)
In a medium bowl, stir together beans, onion, garlic, mayonnaise, and relish.
Season with salt, white pepper, and mustard.
Mix well, and refrigerate for several hours before serving.
