4 garnet yams (sweet potatoes)
3 tablespoons granulated sugar*
1 1/2 teaspoons cinnamon*
1/2 cup whipped butter
Preheat oven to 400°F.
Bake yams for 45 to 75 minutes (bigger yams take longer to cook).
When they are done, the outside will have darkened and the inside will be soft.
You may see liquid from the potato oozing out and charring.
When the potato is sliced open, the inside of the skin will be charred black* from the caramelizing sugar in the potato.
This is a perfectly cooked potato.
Mix the sugar and cinnamon together and set aside.
To serve, slice a potato down the center and squeeze so the pulp fills the center.
Add two Tablespoons of whipped butter, then sprinkle *some cinnamon/sugar over the top.
