Italian Meatball Cups
Who can stop experimenting when you're on a roll? Not me, and not my kids. DS David and DD Jennifer teamed up again to make these delightful pizza-inspired cups. I'm getting a bit worried when I go to the store to shop and my list is shorter than theirs is.
1 package jumbo flaky biscuits
8 Tablespoons pasta sauce, divided
8 Italian-style meatballs
4 Romanita tomatos, halved
2 mini-sweet peppers, quartered
Mozzarella pearls (or fresh mozzarella)
8 fresh basil leaves
Preheat oven to 350º F.
Spray 4 cups of a Texas-sized muffin cup pan with non-stick spray.
Flatten 4 biscuits and press one into each of the 4 prepared cups.
Place 1 Tablespoon pasta sauce in each biscuit.
Place 1 meatball, 1 piece of tomato, 1 piece of pepper, 8 or 10 mozzarella pearls (or a slice of fresh mozzarella) and a basil leaf in the cup.
Sprinkle lightly with salt (optional).
Top with another Tablespoon of sauce.
Bake for 15 minutes.
Repeat with the other half of the ingredients to make 4 more cups.
Allow 2 cups per serving.

gets home at 1 a.m. tonight and has to leave at 7:30 a.m. to work tomorrow. These were made so she can eat something on the way home and get to sleep longer.
