This is my Mom's recipe, which I have changed to suit my needs and tastes. So I guess it is now my original recipe. It can be doubled, tripled, etc. as necessary. My Mom always fried hers on the stove, but I make such a large quantity at one time, I bake them in the oven before dropping them into my sauce or freezing them.
1 pound ground beef
approximately 1/2 cup Progresso Italian bread crumbs
approximately 1/2 cup grated Parmesan cheese
2 teaspoons basil
1 teaspoon parsley
1/2 cup chopped onion (optional)
Mix well, roll into balls and bake on cookie sheets in 350ºF oven for about 1/2 hour.
Then add to marinara sauce or quick-freeze and store in freezer bags.
