3 slices dry bread
8 ounce can tomatoes
2 large eggs
2 pounds ground beef
1 red or green bell pepper, minced
2 Tablespoons minced parsley
1 teaspoon dried oregano or basil
1 clove minced garlic
1 1/2 teaspoons salt
1/2 teaspoon fresh ground pepper
3 Tablespoons romano cheese
Break bread into tiny pieces and combine with the undrained tomatoes.
Let bread soften about 10 minutes.
Add eggs, to tomato/bread mixture.
Mix well until tomatoes are broken up.
Add remaining ingredients, combining lightly until thoroughly blended.
Shape into a loaf.
Place on baking pan lined with foil.
Bake uncovered at 350ºF for one hour.
