1 small (3 ounce) boneless, skinless chicken breast
1 large egg, beaten
1/4 cup Newman's Own Organics Hi-Protein Pretzels --crushed
1 small baked potato
2 Tablespoon's Florida's Natural Calcium & Vitamin D Orange Juice*
2 teaspoons olive oil
1 Tablespoon vinegar
Salt & pepper to taste
2 Tablespoons fat-free yogurt
1 cup steamed broccoli
Preheat oven to 350ºF.
Dip one 3-ounce boneless, skinless chicken breast in 1 beaten egg and then in 1/4 cup crushed pretzels.
Bake chicken and 1 small potato for about 40 minutes.
Whisk together 2 the orange juice with the olive oil, vinegar and salt and pepper to taste.
Drizzle baked chicken with orange sauce and top potato with the yogurt.
Serve with 1 cup steamed broccoli.
