4 large fresh sweet potatoes
1 cup brown sugar
1 cup water
1/2 teaspoon salt
1/4 teaspoon ground allspice
1/4 teaspoon ground nutmeg
Peel sweet potatoes and cut into slices 1/4-inch thick.
Combine remaining ingredients in small saucepan, bring to boiling point and boil 3 to 5 minutes.
Arrange sweet potatoes in a large skillet and add syrup.
Cover and cook until tender, 30 to 35 minutes, basting top layer of potatoes often with syrup.
They should be clear and well candied.
Yield: 6 servings.
