4 cups water
1 cup uncooked rice
1 teaspoon oil
1 medium onion, finely chopped
3 cloves garlic, finely chopped
1 can (14 1/2 ounce) whole tomatoes (drained and chopped)
1 Tablespoon canned tomato paste
1 cup water
1 pound smoked sausage (cut into 1/2 inch squares) or shrimp, or diced ham
1/2 teaspoon salt
1 teaspoon black pepper
STEAM rice in 4 cups water and set aside.
IN a large skillet, heat oil on a medium flame.
Add onions and garlic.
Sauté 5 minutes until tender.
Add tomatoes, tomato paste, and 1 cup water.
Let simmer on low flame, uncovered, for 20 to 25 minutes.
Add sausage (shrimp or ham), salt, and pepper.
Cook 15 minutes more.
ADD cooked rice.
Cook another 5 minutes on medium flame.
