and I and more for the kids when they got home this afternoon and DEMANDED more!
4 slices bread with crusts removed
filling of choice
(I used peanut butter and jelly, peanut butter and Nutella, and mayo with bologna and cheese.)
Using a rolling pin, roll the trimmed bread into thin sheets to represent the "sushi" wrappers.
Spread on the peanut butter from top to bottom, side to side.
If using jelly, spread very thin and leave a gap at the top to permit rolling into pinwheels without forcing out the jelly.
If using Nutella, spread thin and leave a small gap at the top.
If using luncheon meat with cheese, place the cheese at the bottom of the bread and cover with the meat also starting at the bottom edge.
Roll the pinwheels into a tight roll and carefully slice the roll into 4 pieces.
Repeat for all the bread.
Serves 2 with 2 complete "rolls" each.

Nicest part (other being a good sandwich) is that you can make 2 PB&J and 2 bologna and cheese and put one of each into a lunch. Also, makes it easy to give 1/2 sandwich to one child and 1 1/2 to another.
