1 Graham Cracker, crushed & divided for the top of cheesecake
Break up a few more Graham Crackers to cover the bottom of the pan you are using. Spray pan with Pam first before you put in the crushed Graham cracker Crumbs.
1 cup boiling water
1 package (4-serving size) JELL-O brand lemon flavor, Sugar Free Low calorie Gelatin Dessert
1/2 package (small size one) JELL-O Lemon Pudding & Pie Mix , Sugar Free
1 cup fat free riccotta cheese
8 ounces Philadelphia FREE Fat Free Cream Cheese
2 cups thawed COOL WHIP FREE Whipped Topping
Stir boiling water into gelatin in large bowl, at least 2 minutes, until completely dissolved.
Pour into blender container.
Add cheeses; cover.
Blend on medium speed until smooth, scraping down sides occasionally.
Pour into large bowl.
Gently stir in whipped topping.
Pour into prepared pan, or Graham Cracker Pie Shell.
Smooth top.
Sprinkle remaining crumbs around outside edge of cheesecake.
Refrigerate 4 hours, or until set.
Store leftover cheesecake in the refrigerator.
