2 (29 ounces) cans sweet potatoes
1 Cup sugar* (1/2 Cup if using sweetened condensed milk)
1/4 stick butter or margarine, melted
1/2 teaspoon vanilla
1/4 teaspoon nutmeg
1/2 teaspoon cinnamon
1 Tablespoon molasses
1/4 Cup heavy cream or sweetened condensed milk*
(*If using sweetened condensed milk, use 1/2 Cup sugar instead of 1 Cup)
Put potatoes in large pot, bring to boil, then drain liquid.
Beat sweet potatoes, butter, eggs & sugar until creamy.
Add nutmeg, cinnamon & vanilla. Beat and then add molasses.
Add cream or sweetened condensed milk.
Beat and pour into two, 9” pie shells.
Bake 350 degrees for 50 – 60 minutes.
Let cool and refrigerate.
Can be made in advance and frozen.
Makes 2 full pies or 3 to 4 half full pies.
