This one is a must at our home. Seldom post, but had to share this one. ~jv
8 pounds yams peeled and sliced in 1/2 " slices and placed in 9 X 13" Pyrex casserole
1 1/4 cup sugar
2 Tablespoons cornstarch
1 teaspoon salt
2 cups orange juice
1/4 cup margarine
grated peel from 1 or 2 oranges
Prepare yams and baking dish.
In saucepan, mix sugar, cornstarch and salt.
Add orange juice and cook until thickened.
Add margarine and the grated peel.
Pour the sauce over all and bake, covered, for 45 minutes.
Baste well and bake for 20 - 30 more minutes uncovered.
