1/2 cup chopped onion
2 cups chunky salsa
1/8 teaspoon black pepper
2 cups cooked rice
1 cup Kraft shredded reduced fat cheddar cheese
Preheat oven to 350ºF.
In a skilled sprayed with olive flavored cooking spray sauté onion about 5 minutes.
Add salsa and black pepper.
Mix in rice and 3/4 cup of the chedder cheese.
Stir until cheese is melted.
Pour into and 8x8 baking dish sprayed with olive flavored cooking spray.
Bake 15 minutes.
Sprinkle with remaining cheddar cheese and bake another 5 minutes.
