Ingredients for your favorite meatloaf
4 (or more) large baking potatoes.
Milk or buttermilk, your choice.
Grated cheese of your choice.
Prepare your favorite meatloaf recipe.
Bake 4 baking potatoes in the microwave or oven.
Cut each in half and remove the potato from the skin.
Fill the potato skins with meatloaf mixture, and place on a foil lined cookie sheet.
Bake in oven at 350ºF degrees, for 35 to 40 minutes, until the meatloaf is done.
Meanwhile, mash potatoes with milk or buttermilk, butter & salt & pepper (to taste).
Just before the meatloaf is done, remove it from the oven & top it with the mashed potatoes & grated cheese.
Place them back in the oven for a few more minutes until cheese melts.
Serve with a tossed salad for a quick & easy dinner.
