1 Tablespoon olive oil
3 cloves garlic, minced
3 (14 ounce) cans chicken broth
8 ounce package dry cheese tortellini
1 (14 ounce) can diced tomatoes
1 (8 ounce) can tomato sauce
5 ounces fresh spinach leaves, chopped
1/4 cup Parmesan cheese
dash black pepper
Melt oil in a saucepan over medium heat; add garlic.
Sauté for 30 seconds; stir in broth.
Bring to a boil; then add tortellini.
Season with pepper; simmer until tortellini is tender.
Stir in spinach, tomatoes and tomato sauce; simmer for 5 minutes.
Sprinkle with cheese.
Serves 8 to 10.
