Nice hearty meal. I saw this recipe in a demo at our state fair.
The wild rice council gave out the recipe following the demo.
1 cup chopped onion
1 cup chopped green pepper
1 Tablespoon canola oil
1 teaspoon cumin
1 teaspoon garlic powder
2 chicken breasts, cooked and shredded
3 cups chicken broth
1 can corn, drained
1 can black beans, rinsed and drained
2/3 cup salsa, any kind
3 cups cooked wild rice
1/2 cup chopped cilantro
In large sauce pan or dutch oven, sauté the onion and green pepper in the canola oil.
Add rest of ingredients.
Cook until everything is heated through.
I like to simmer it for about 20 minutes so all the flavors blend.
You can also add chopped zucchini when you sauté the onion and green pepper.
I only do that when I have some fresh from the garden.
