1/2 cup (1 stick) unsalted butter
1 3/4 cup packed light brown sugar
2 large eggs
2 cups self-rising flour
1 teaspoon butter rum extract
1 cup chopped pecans
powdered sugar for dusting
Heat oven to 350ºF.
Coat a 9x13" baking dish with non-stick cooking spray; set aside.
Melt butter in a medium-size saucepan.
Add sugar, eggs and flour to saucepan and mix till well blended.
Stir in butter-rum extract and pecans.
Pour into prepared pan and bake for about 25 minutes or till toothpick comes out clean.
Cool completely on wire rack and dust with powdered sugar.
