1/2 cup chopped red pepper
1 large carrot, grated
1 cup diced celery
1 medium Yellow Onion, chopped
3 large cloves garlic, minced
1 pound lean ground turkey
1 (6 ounce) can tomato paste
1 can Hunt's sloppy joe sauce
1 Tablespoon garlic powder
1 teaspoon celery salt
1 teaspoon ground black pepper
2 Tablespoons olive oil
8 Whole Wheat hamburger buns (I used Weight Watchers for the calorie calculation)
Chop the red pepper, onion, carrot, and celery.
Mince the garlic and add to the vegetables.
In a large non-stick pot, drizzle 2 Tablespoons olive oil and set heat to medium.
Add the vegetables and allow to slowly cook down for approximately 5-10 minutes.
Once the onions have a slightly translucent look, add the ground lean turkey, crumbling and breaking it up as it is added to the pot.
Cook completely thru.
Once the turkey is cooked, drain any fat that is at the bottom of pot.
Return to pot on stove over a medium heat, and add one can tomato paste, stirring constantly until completely incorporated.
Add garlic powder, celery salt, and pepper.
Transfer the mixture to a large slow cooker.
Cover with one can of Hunt's sloppy joe sauce.
Mix thoroughly, cover, and set on low for 4-6 hours, or high 2-3 hours.
