1/4 cup unsalted butter
1 clove garlic, minced or pressed
1 cup heavy cream
2 Tablespoons cream cheese
Freshly ground pepper
1/2 to 3/4 cup fresh grated Parmesan cheese
Fresh chopped parsley for garnish, if desired
In a saucepan, heat the butter on low heat until it melts.
Take the pan off the heat and stir in the garlic.
Add the heavy cream, bring up the heat to medium, and heat to just under boiling, but don't let it boil.
Stir in the cream cheese until it melts.
Remove from the heat, add a couple of grinds of pepper and stir in the Parmesan cheese.
Serve over cooked pasta (traditionally linguine).
If desired, sprinkle more freshly grated Parmesan cheese on top.
Sprinkle with chopped fresh parsley, if using.
May also add cubed, cooked chicken and/or cooked broccoli flowerettes.
