2 large eggs, slightly beaten
10 ounces frozen chopped spinach (drain)
8 3/4 ounces cream style corn
1 cup sour cream
1/2 cup melted butter
1/4 teaspoon salt
8 1/2 ounces corn muffin mix
1/2 cup shredded cheese
Combine in large bowl beaten eggs, spinach, corn, sour cream, butter and salt.
Mix well and add corn muffin mix (or Jiffy clone mix + the oil).
Re-stir.
Pour into a greased 8" baking dish.
Bake in oven at 350ºF for 30 minutes.
Sprinkle top with cheese, melt it and serve warm.
