1-2 cups Quinoa, rinsed and drained
1 whole onion, finely chopped
1 whole carrot, coarsely grated
1 whole zucchini, coarsely grated
4 large eggs
1/2 cups bread crumbs
1 Tablespoon olive oil
salt and pepper, to taste
Pour 1 1/4 cups of water into a pot, add the quinoa and bring to a boil.
Cover, lower the heat, and cook for 15 minutes.
Transfer to a bowl and add all the other ingredients.
Season with salt and pepper.
Form 20 patties.
Heat canola oil in a large Teflon pan on medium heat and saute the patties 2-3 minutes on each side until browned.
Serve warm or at room temperature, freezes well.
