2 1/4 cups graham crackers, gingersnaps or oreo cookies, crushed
1/2 cup white sugar
1/2 cup melted butter
3 (8 ounce) packages cream cheese, softened
2 (14 ounce) cans sweetened condensed milk
1/2 cup lemon juice, fresh is best
1 1/2 teaspoons vanilla (or any flavor) extract
1 pint sweetened whipped cream or 1 (12 ounce) container frozen whipped topping, thawed
Topping if desired:
2 cups crushed oreo cookies
2 cups crushed candy bars
2 cups fresh fruit
2 (21-ounce) cans any flavor pie filling
Stir together crushed cookie crumbs, sugar, and melted butter.
Press into a 9x13 inch baking dish or two pie pans
Use an electric mixer to beat the cream cheese until smooth.
Beat in the sweetened condensed milk, lemon juice, and extract until smooth.
Fold in whipped topping.
Pour filling into crust and smoothing the top.
Top with pie filling, if desired.
Refrigerate until firm, 2 to 4 hours.
