LuAnn's No-sugar, Low-fat "Cheesecake" Dessert
I hesitate to post this after Jen's restaurant recipe -- as I'm sure hers is a definitive dessert. Thank you for sharing it Jen! But, if David is looking for chocolate cheesecake -- here's something I love (when I "indulge" in dairy). Unfortunately, it doesn't have any cream cheese in it! :/ But, it tastes a LOT like a softly set cheesecake. It's more dense than fluffy, but not as dense as traditional cheesecake. Surprisingly, it's sugar-free and quite low in fat, but don't let that prejudice you against it! It tastes very rich.
(You chill this mixture in the crust of your choice; of course, if you add a graham cracker crust, the dessert will no longer be sugar-free)! You can, however, top with sugar-free Cool Whip and lightly toasted sliced almonds.)
16 ounces unsweetened Greek yogurt (or, if unavailable, just use unsweetened lowfat yogurt)
1/2 cup lowfat or fat-free sour cream
1/2 cup lowfat milk (or enough to obtain the consistency you like)
1 (1.5-ounce) package sugar-free instant chocolate pudding mix (such as Jell-O)
1/2 teaspoon vanilla or almond (my favorite) extract (optional)
Sugar-free Cool Whip
Lightly toasted sliced almonds
Combine all ingredients until well blended.
Pour into a prepared crust (i.e. graham cracker crust) or into individual serving dishes.
Top with whipped topping and almonds, if desired.
Chill until serving time.
