Roasted Red Pepper Basil Sauce
Tonight I wanted mushroom ravioli so I started looking around for ingredients. I found a roasted red pepper in the freezer and some shrimp. I have fresh basil growing, so the following is what I came up with. It was very good.
1 roasted red bell pepper coarsely chopped
3 cloves garlic minced
3 Tablespoons chopped basil
1/4 cup olive oil
1/2 cup white wine
salt and pepper to taste
Put all of the ingredients in a blender and blend until almost smooth.

Note: I sautéed shrimp in a little butter (and a little cayenne), added the sauce, and cooked mushroom ravioli and simmered for about 5 minutes. I think it would be good over any pasta.
