2 pounds ground beef
1 small onion, chopped, 2 1/2 ounces
1 green pepper, chopped
1 clove garlic, minced
1/2 teaspoon pepper
1 teaspoon cumin
1/2 teaspoon chipotle chile powder
2 Tablespoons chili powder
3 cups water
1 (8-ounce) can tomato sauce
1 (14.5 ounce) can diced tomatoes, undrained
2 teaspoons salt
Brown the meat, onion, green pepper and garlic in a large pot; drain fat.
Add remaining ingredients.
Cover and simmer 3 hours.

If you can't get chipotle chile powder (McCormick "green" spices), just use 1/2 teaspoon more regular chili powder. This makes 6 small bowls of chili or 4 large ones.
