4 cups fresh or unsweetened frozen rhubarb cut into 1 inch pieces
1 1/2 cups wild raspberry (or strawberry) flavored diet beverage
*sweetener to equal 1/4 C sugar
1 small package raspberry (or strawberry) low-calorie gelatin
In saucepan cook rhubarb and 1 cup beverage until tender.
Remove from heat.
Soften jell-o/gelatin in 1/2 cup beverage and add to rhubarb.
Stir until mixed.
Cool and divide into 4 servings.
