2 (14.5-ounce) cans no-sugar-added fruit cocktail, drained (reserve juice)
1 (20-ounce) can pineapple tidbits, canned in juice, drained (reserve juice)
1 (32-ounce) container fat-free plain dairy (or soy yogurt)*
1 cup reduced-fat or fat-free sour cream (or soy sour cream)
1 1/2 cups juice (reserved from drained fruit)
2 teaspoons vanilla
2 (1.5-ounce) packages sugar-free vanilla pudding mix
1 (8-ounce) container Cool Whip Free (fat and sugar free)
2 bananas, sliced
Drain fruit cocktail and pineapple tidbits, reserving juice; set fruit aside.
In a large bowl, whisk together the yogurt, sour cream, 1 1/2 cups of the reserved fruit juice (save any remaining juice for another use), vanilla and pudding mix until smooth.
Fold in the whipped topping.
Gently fold in the drained fruit.
Refrigerate until ready to serve.
Just before serving, fold in the sliced bananas.
