4 boneless skinless chicken breasts (seasoned with salt, pepper, seasoning salt, paprika)
1/2 cup red pepper
1/4 cup chopped red onion, chopped
1/2 cup carrot, chopped
1/4 cup cucumber, chopped
1 garlic clove, minced
1 teaspoon ginger, minced
Salt and pepper to taste
1/4 cup light mayonnaise
4 Romaine lettuce leaves, washed
