1 stick unsalted butter plus 2 Tablespoons, softened
1 cup light brown sugar, lightly packed
1 1/3 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup oats (I used quick oats)
1 (14-ounce) can sweetened condensed milk
1 lemon zested
1/2 cup freshly squeezed lemon juice
Preheat oven to 350ºF (325ºF for a glass pan).
In a large mixing bowl, cut butter into brown sugar.
Sift together flour, baking powder & salt.
Add flour mixture & oats to the brown sugar mixture & cut in until large crumbs are formed.
Press half of crumbs into bottom of an 8x11" baking pan (I used Pyrex).
In a medium bowl stir together sweetened condensed milk, zest & juice.
Lightly spread over crumbs in pan.
Carefully spoon remaining crumbs over filling (do not press crumbs into filling).
Bake for 20-30 minutes until golden brown.
Remove & cool on counter for 30 minutes.
Cut into squares.
Now chill in refrigerator several hours.
