Entry in Salad Contest.
This may sound a little strange, but trust me, it is excellent! I got it from my DH's cousin when we were visiting in Washington State 31 years ago. They took the crabs right out of the Puget Sound and it was oh, so good. I have made it myself using canned crab, and although good, fresh crabs are better!
2 loaves bread (trim crust and cut into cubes)
4 cups diced celery
1 medium dried onion, grated ( I used fresh)
1 pound shrimp
1/2 pound fresh crab meat
1/2 cup lemon juice
2 cups mayonnaise
8 large hard-boiled eggs, chopped
Mix together bread, celery and onion and let it sit overnight.
The next day, add the shrimp, crab meat, lemon juice, mayonnaise and hard-boiled eggs.
Mix well and serve.
If you don't want to use shrimp, use all crab meat or vice versa. I served this at a 4th of July barbecue and served 20-30. However, I had 20 other dishes, so....use your judgment.
