MASHED POTATO SALAD
An old recipe given to me by a friend from early 1950s.
4 cups plain mashed potatoes
1/3 cup celery, chopped
1/3 cup green pepper, chopped
1/3 cup onion, chopped
2 large eggs, hard boiled and chopped
1/3 cup pickles, chopped
Salt and pepper, optional
1/4 cup water
1/4 cup cider vinegar
2 Tablespoons sugar
2 large eggs, beaten
Combine the potatoes, celery, green pepper, onion, eggs, pickles and salt and pepper in a large bowl.
for the Dressing:
Put the water and vinegar in saucepan with the sugar and bring to a boil.
Beat the 2 eggs, pour a small amount of hot mixture into beaten eggs, then pour this mixture into the hot mixture in the saucepan.
Be careful and DONíT let mixture get too stiff.
Pour over the potato mixture in the bowl and mix well.
Serve hot or cold.
Great hot and equally as good cold.
