1 (12 to 16-ounce) box spiral tri-colored pasta
1 clove garlic minced
1 small zucchini chopped
1 red onion chopped
1 (15-ounce) can black olives sliced
1 (15-ounce) can artichoke hearts; drained and cut into quarters
2 to 3 ribs celery chopped
1/2 cup red pepper chopped
1 small jar capers, drained (optional)
chopped pepperoncini peppers (optional)
1 to 2 teaspoon(s) Italian seasoning
Pepper to taste
1/4 cup or more Italian, Caesar or Garlic dressing
4 ounces smoked cooper cheese, cubed
4 ounces Colby cheese, cubed
1/2 cup grape tomatoes or diced tomatoes
Cook pasta according to directions and drain.
Add next 12 ingredients and mix gently.
Mix in cheeses.
Add tomatoes just before serving.
