1/2 head green cabbage, finely chopped
1 sweet onion, finely chopped
2 cucumbers, finely chopped
2 stalks celery, finely chopped
2 carrots, peeled and finely chopped
3 tomatoes, finely chopped
2 cups cauliflower, finely chopped (optional)
1/3 cup apple cider vinegar (I used Red Wine vinegar)
2/3 cup olive oil
1-2 Tablespoons Greek Seasoning or Celery Salt (I used 1 Tablespoon Greek Seasoning)
1-2 Tablespoons sugar (I used 1 Tablespoon)
Freshly ground pepper to taste
In a large bowl, combine all of the vegetables and toss to mix.
In a container with a lid, combine all of the marinade ingredients and shake to mix well.
Pour the marinade over the veggies, toss to coat and refrigerate for at least 30 minutes.
