DD Rebeca's No-Bake Strawberry-Graham Refrigerator Cake
When we went to the store Saturday we bought a pound of HUGE strawberries. Rebeca immediately claimed them for a no-bake cake she wanted to make. This recipe is a perversion of a recipe she found on the web that was made with condensed milk and chocolate syrup. This is her version.
1 pound fresh Strawberries
1 or 2 teaspoons sugar (or sugar substitute)
8 ounces whipped topping
2 packets of graham crackers (honey or cinnamon)
Rinse and slice (in uniform thickness) the strawberries.
Place a dollop of whipped topping in a container (about 8x8 inch or several smaller containers - ALL capable of being covered.
Spread the whipped topping into a thin layer on the bottom of the container.
Cover the topping with a complete layer of graham crackers, breaking some as necessary to get maximum coverage.
Cover the crackers with a layer of whipped topping and then with a layer of strawberries.
Add another layer of crackers, whipped topping and strawberries to make at least 3 layers, ending with the strawberries.
Cover the cake and refrigerate for at least 4 hours, but preferably overnight.
Serves 4 to 6.

I need to get the idea that she is only 6 out of my head...she knows exactly what she wants and how to go about it. Rebeca even made a 1 cup version of this for her mother's lunch by coating the side of the tumbler-like container, standing up the 1/4 graham strips and pressing them into the topping and slicing a huge strawberry into the space in the center with more whipped topping. She froze that and sent it in
's lunch where it had a chance to defrost but still be very cold. oz
