
Potato Salad
Entry in Salad Contest
I first used this recipe when my husband and I were "new nesters" and am still using it 50 years later when we are "empty nesters." It's simple but good.
Ingredients:
2 cups diced warm potatoes
1/2 onion, grated
1 Tablespoon vinegar
3 Tablespoons Canola oil
1/2 teaspoon salt
1/4 teaspoon sugar
1/8 teaspoon pepper
1/2 teaspoon minced parsley
1 large hard-cooked egg, chopped
1/4 cup mayonnaise, or to taste
2 Tablespoons sweet pickle relish
Instructions:
Combine the potatoes with the onion, vinegar, oil, seasonings, and parsley.
Add the egg, mayonnaise, and relish to blend.
Chill and serve in nests of lettuce.
