These make wonderful individual meat loaves. I used to make meat loaf the traditional way, but after seeing them in Kraft's Food & Family magazine I gave it a try. Now this is how I usually bake them. Even though they had a variety ways to make it, I use the same recipe my mom would make when I was growing up....
2 large eggs
1 slice bread, torn in pieces
1/2 medium onion, diced
1/4 cup milk
1/4 cup ketchup
1 1/2 teaspoons salt
1 teaspoon ground black pepper
1 1/2 teaspoons worcestershire sauce
1 teaspoon garlic salt
1 pound ground beef
Preheat oven to 375ºF.
Mix all ingredients together just till combined, don't over mix.
Spray muffin pan with non-stick cooking spray.
Form meat mixture into individual medium sized balls & drop into each muffin tin.
Bake 30 minutes.
Spread each mini loaf with ketchup and bake an additional 10 minutes or until they're cooked through (160ºF).
