1 cup Corn Meal (Bob's Red Mill a guaranteed gluten free corn meal)
1 1/2 cup brown rice flour
1 cup sugar or honey
1 Tablespoon baking powder
1 teaspoon baking soda
1 teaspoon xanthan gum
1/2 teaspoon salt
1 teaspoon vanilla
1 cup rice, soy, hemp milk
2 large eggs or egg replacement (Ener-G makes a good one)
1/2 cup apple sauce
3 Tablespoons melted butter or melted Coconut oil
Preheat oven to 350ºF.
Combine all dry ingredients in large bowl and mix well.
Add rice milk, eggs, apple sauce, vanilla and melted butter together and mix well.
Combine wet ingredients with the dry and stir until fully incorporated.
Dollop into paper muffin cup about 2/3 full.
Bake for 15 - 18 minutes or until a toothpick comes out clean.
Let cool and watch them disappear!
